2 parts Tamarind Syrup 1 part White Overproof Rum (I used Wray & Nephew) 1 part Vanilla Vodka (I used Absolut Vanilla) 3 part Club soda Cinnamon smoke Tamarind Syrup 1 cup Tamarind Balls (pre-made balls or use tamarind & sugar) 1 cup water Simmer equal parts of tamarind, sugar and water in a pot over low heat for 1–2 minutes. 2 oz Gin 4 - 5 Raspberries 4 - 5 Blueberries 5 mm piece Chili Pepper 4 oz Soda Water 0.5 oz Cranberry Syrup 0.5 oz Lime Juice Thyme smoke Rock glass Flame a sprig of thyme (preferably dried) and place on plate/coaster; then cover with glass to capture the smoke. Place raspberries,blueberries, chili slices, lemon juice and syrup in shaker/mixing glass and muddle. Add ice and soda water and stir. Remove glass from coaster and add ice cubes. Immediately double strain (use conical strainer and serve. Garnish with blueberries in the glass and a thyme sprig.

1 part Scotch Bonnet infused Mango Nectar 2 parts Passion Fruit Juice 2 part Orange Juice 1 White um (I used Wray and Nephew Overproof) 1/4 Pimento Liqueur Pimento smoke Use pimento/allspice in a handheld cold smoker and fill glass with smoke, sealing it with a plate or coaster. If you don't have a smoker, place the allspice on a flame safe surface and flame them with a butane torch until they start to smoke; then cover with glass (brandy snifter) so that it fills with smoke.
